While Hôtel de l'Europe has the Excelsior, it's actually La Rive at the Intercontinental Amstel Amsterdam that overshadows the hotel competition, and it does so by serving chef Edwin Kats' superb regional French cuisine without the excessive formality that can too often mar such a place. For the perfect meal when money is no object.
