Central's fine dining jewel aims high with extravagant ingredients, exceptional open-air views, gastronomic cocktails and a broad wine list, but dim lighting hides what's on your plate. The brief menu focuses on imported ingredients at premium prices: Maine lobster, French foie gras. There was no shortage of technique in a dish of slow-braised pork belly topped with foie gras in a rich red wine reduction.
