One of the acknowledged masters of the new wave of Catalan cuisine, Carles Abellan was, inevitably, a disciple of Ferran Adrià in the kitchens of El Bulli. Nowadays, however, he ploughs his own, highly successful furrow in this urbane and sexy restaurant. The selection of tiny playful dishes changes seasonally, but might include a ‘Kinder egg’ (lined with truffle); tuna sashimi and seaweed on a wafer-thin pizza crust; a densely flavoured fish suquet; or a fun take on the bikini (a cheese and ham toastie).
