Top-notch but unstuffy, Saüc ('elderberry') is generally overlooked by the section of international media crazy for 'Spain is the new France' restaurant stories. This may be down to chef Xavier Franco's focus on precise, imaginative cooking, without the tricksy, experimental approach of some of his peers. There's the odd nod to fashion (cherry gazpacho, liquorice in the puddings); otherwise, a rigorous approach to sourcing and tradition is evident in dishes such as terrine of cap i pota with chickpea cream, a slow-poached egg and sturgeon caviar from the Vall d'Aran.
