Cheaper (but still by no means cheap) sister restaurant of superb French restaurant Nectarine, Républica goes easy on the foie gras and Piedmont truffles and heavy on superb grilled meats. In other words it's an upscale parrilla. Star dishes include the rack of beef ribs cooked twice (four hours in wine and then a quick stint on the grill), the home-smoked salmon, and one of the tastiest roast lamb dishes in town.
