    Limoncello

    10 organic lemons
    1 750ml bottle Everclear
    2.5 cups water
    2 cups sugar

Wash lemons, removing stems, ends and blemishes. Peel yellow zest from lemon, avoiding white pith. Place peels in 1.5 quart glass jar. Add Everclear. Seal tightly. Set jar in a cool, dark, dry place, stirring once every two weeks.

After two months, combine water and sugar in saucepan. Bring to a boil and stir until all the sugar has dissolved. Let cool. Pour syrup into jar of lemons and Everclear. Return jar to darkness.

After two weeks, strain mixture through cheesecloth into a new container, pressing tightly on lemon peels to extract liquid. Transfer into glass bottles with cork stoppers. Store in freezer for two weeks, then serve chilled. One taste and you’ll know it was worth the wait.
