Last night at the Hideout, Greg Hall, the former longtime Goose Island brewmaster, debuted RedStreak, the first in a line of a ciders he's created under his new venture, Virtue. The event featured food from Belly Shack, GT Fish & Oyster, Lula Cafe, Mindy's Hot Chocolate, Publican Quality Meats, Sunday Dinner, Trencherman and Yusho, and music from The Waco Brothers and The Blisters, all in celebration of an English session-style cider aged in American Oak. Proceeds from the event benefitted The Academy of Global Citizenship, a Chicago Public Charter School.


RedStreak was produced at the St. Julian Winery in Paw Paw, Michigan, from a blend of apples from small farms in Michigan and Illinois, including Nichols Farm, which TOC visited with Hall last fall. It's the first in what will be a line of ciders: Fall releases include Lapinette, a French-style brut cider aged in French oak, and The Mitten, aged in 12-year-old bourbon barrels. Hall also plans to construct a LEED-certified cider house on a 48-acre farm in Fennville, Michigan, slated to open in fall of 2013.


RedStreak, which the press release describes as having "bright apple peel on the nose with a slight sweetness and a tart yet slightly tannic finish," is, as of today, on draft at the following establishments: [node:150197 link=The Bad Apple;], [node:152109 link=Delilah’s;], GT Fish & Oyster, Hideout, Hopleaf, Lula Cafe, Nellcôte, The Publican, Sheffield’s, Uncommon Ground, and Village Tap. It is coming soon to The Bristol, Bottom Lounge, Empty Bottle, Farmhouse, Longman & Eagle, Maria's Packaged Goods and Community Bar, HotChocolate, Publican Quality Meats, Revolution Brewing, Tavernita, Tiny Lounge, and the yet-to-open Trenchermen.
