Jimmy Bannos and Scott Harris are no schlubs in the kitchen, but for their new venture they’ve declined to create a single original recipe. Instead, Salatino’s is a replica of Gennaro’s, the small Italian restaurant that was a Taylor Street stalwart until it closed in December 2009. So exacting a replica, in fact, that the duo brought on Mary Jo Gennaro as a partner and is using all her recipes. The menu (which will be familiar to Gennaro’s fans) will consist of red-sauce staples like double-cut pork chops, chicken Vesuvio and egg noodles with cream sauce, with specials added frequently by chef de cuisine Mike Dellamano. As for Bannos and Harris, they’re doing their own thing next door, at a pizza joint they’re calling Dough Boy’s, which will sell thin-crust pizza by the yard as well as salads and sandwiches—all recipes that are their own.
