FLYER BY NIGHT Michael Bisbee is a clubs guy—he owns Manor and RiNo, two venues where bottle service is an unofficial necessity. But lately he’s been seeing more people forgoing clubs and opting for a shot at the corner bar instead. “Clubs feel more pretentious,” he reasons. “Whereas a bar welcomes everybody.” With that in mind, he’s designed his new place, Stay, as a hybrid of sorts. There—hidden behind an unmarked, poster-riddled, alleyway entrance—bottle service is available but not pushed, dancing is possible but not expected, and the DJ will take requests, in effect acting more like a jukebox. Most important, nobody will be turned away, which means no VIP lists and no long lines in the cold. (Though if you’re into that kind of thing, Bisbee has a couple of places he’d recommend.)
