Goat Milk Toffee Pub Pop at Publican Quality Meats
Publican pastry chef Anna Shovers makes a variety of ice cream push-pops, which are $4 each. This flavor is packed with tons of sweet, delicious toffee.—Amy Cavanaugh

Fernet Mint Fudge Pub Pop at Publican Quality Meats
Cocktail lovers, take note—this Pub Pop tastes exactly like Fernet mingled with thick ribbons of fudge. We'll take another round.—AC

Huckleberry Cheesecake Pub Pop at Publican Quality Meats
With little bits of cheesecake and a fruitiness that's refreshing, not sweet, the huckleberry Pub Pop is the most summery flavor of all.—AC

This Just Got Serious at Scoops
Scoops gets its ice cream from Wisconsin's Chocolate Shoppe Ice Cream, and one of its new-to-Scoops flavors is this sweet-salty mix of salted caramel ice cream, sea salt fudge and salted cashews.—AC

Dark Side of the Moon at Scoops
When we first tried this combination of Blue Moon and Zanzibar–flavored ice creams, we couldn't recognize the flavor. But the rich Zanzibar chocolate is a good partner for the Blue Moon ice cream, which isn't flavored like beer, as you might expect. It's flavored like the sugary milk left at the bottom of your bowl after eating Froot Loops.—AC

Malted strawberry gelato at Black Dog Gelato
I hadn’t gone for a strawberry flavor since I was a kid, and that’s a mistake I intend to rectify this summer by eating this simple yet delicious gelato every chance I get.—Laura Baginski

Peach Buttermilk, Raspberry Buttermilk & Harry's Key Lime from Dana Cree at Publican Quality Meats
Blackbird pastry chef Dana Cree was already one of my favorite pastry chefs in Chicago. Then she launched a line of ice cream pints last year and I liked her even more. The peach tastes like biting into a fresh, ripe peach, while the key lime is refreshing, with chunks of sweet graham cracker crust. But it's the raspberry, tart and slightly tangy, that was my clear favorite.—AC

Peach ice cream at George's Ice Cream & Sweets
The best time of summer is that week at farmers' markets when the peaches are the size of a small child's head and juice runs down your hand with every bite. While not quite that good, this scoop of peach-flavored ice cream dotted with peaches will do the trick every other weekend this summer. George's also gets its ice cream from Chocolate Shoppe and the flavor is new to the Andersonville shop this year.—Erin Delahanty

Lemon Meringue ice cream at George's Ice Cream & Sweets
This swirl of lemon and marshmallow ice creams with a ribbon of lemon is tart and refreshing on a hot summer's night. The only thing that would make this better would be the addition of pie pieces.—ED

Wildberry Lavender at Jeni's Splendid Ice Creams
This is my favorite summer flavor at Jeni's. Made with currants, it's incredibly fruity but not too sweet, and a trace of lavender mellows it out.—AC

Milkiest Chocolate in the World at Jeni's Splendid Ice Creams
I can't recall ever ordering chocolate ice cream, but then I discovered this gem at Jeni's. It's perfect for people who can't handle overly rich chocolate (like myself)—it's super light, creamy and slightly sweet.—AC

Goat Cheese with Red Cherries at Jeni's Splendid Ice Creams
Savory goat cheese and sweet red cherries make this flavor taste like the most delicious cheesecake ever.—AC

Saison with Sunflower Seeds and Golden Flax at Jeni's Splendid Ice Creams
Yep, this ice cream is made with beer from Ohio's Rockmill Brewery. That gives the ice cream a light hops flavor, and it's stuffed with sunflower seeds, flaxseeds and pumpkin seeds, which add an unexpected crunch.—AC

14/20

Brambleberry Crisp at Jeni's Splendid Ice Creams
With oat streusel and a blackberry-currant jam streaking through vanilla ice cream, this flavor is on Jeni's year-round menu for one reason: It's absolutely delicious.—AC

Pistachio and Honey from Yoberri Gourmet
Pistachio ice cream is an office favorite, and we were all excited by the version from Yoberri. It's super nutty and lightly sweet, so it's a good pick to scoop into a sugar cone.—AC

Biscotti crema at Eataly
Can what is essentially cookies and cream be a light treat perfect for summer? When it’s this restrained Italian version, yes. Tiny slivers of cookie dot this vanilla gelato but don’t overpower it.—LB

17/20

Fiordilatte gelato at Eataly
The word translates from Italian to “milk’s flower,” but it could just as easily translate to “tastes like clouds.” There’s no familiar flavor to compare it to—it’s just a subtly sweet milk flavor that’s light, ethereal and addictive.—LB

Gelato Coffee Float at Baker & Nosh
We know boozy floats have been all the rage, but these caffeinated floats are a sweet summer treat. Choose from a wide variety of Zarlengo's gelato flavors (we went traditional with the vanilla bean) topped with La Colombe Pure Black coffee. Also, does this mean it's now acceptable to have ice cream with breakfast?—ED

Basil and Malted Milk Gelato at JP Graziano Grocery Company
Zarlengo's is making gelato for JP Graziano this year, and the initial flavors include basil, which is sweetly herbal and better than you'd think, and malted milk, which is lightly nutty and so good that next time I'll be getting a dish of just that flavor.—AC

French Toast at Scooter's Frozen Custard
This season, Scooter's special rotating custard flavors are all about breakfast—maple, maple bacon, French toast, cereal milk and others. Since visiting the Roscoe Village custard shop is one of our summer traditions, we'll be trying to eat each one of the special flavors this year.—AC

We love Rainbow Cones as much as everyone else, but sometimes we want to try something new—after all, there are more than 100 ice cream shops in Chicago. We've been gorging ourselves on ice cream for weeks to find the best new flavors, and narrowed them down to such gems as the lightest chocolate ice cream we've ever had, a perfect strawberry flavor and a surprisingly airy biscotti gelato.
