    Description
    In his take on contemporary Korean, chef Paul Choi deconstructs traditional Korean fish stew into seared monkfish with a concentrated sauce of the stew’s spicy-sour flavors and douses heirloom tomatoes with soy sauce, rice wine vinegar, and slivers of ginger, garlic and green onions. Purists will find bibimbap and chapch’ae, but made with locally grown vegetables, prime sirloin and heirloom pork.
