    Chef Grant Achatz has entered year two of his tenure at the restaurant Gourmet recently anointed No. 1 in the country. What’s all the fuss? Food like you’ve never seen before. Sit back and enjoy the show, a well-orchestrated ride that plays with textures, temperatures and notions of "normal" cuisine, while somehow remaining grounded in season, flavor and flawless execution. Recent menu stunners include squab with peppercorn custard, sorrel and strawberries; cocoa-coated watermelon with cubed Kobe beef; and a parfait of porcini puree, almond ice cream and powdered ham.
