Description
hef Martial Noguier creates contemporary French fare grounded by seasonal American products, hitting all the right buttons: sweet, sour, salty, bitter and savory. This summer hes tempting us with dishes like bobwhite quail with grilled radicchio, a prosciutto chip, candied salsify and sassafras glaze and a wild striped bass with manila clams, baby purple artichokes and crispy bacon. Sweets like housemade truffles and a white chocolate–coconut mousse with lime foam are tasty endings.
