He's ushering in autumn with dishes such as braised beef cheeks with potatoes and onion confit, honey-orange–glazed quail with white beans and house-smoked bacon, and a bubbling cazuela of chorizo, chickpeas, spinach and piquillo peppers. The budget-minded can find value in Wine Down Wednesdays, a five-course tasting menu with wine pairings for $44.
