Noodle Bar
Noodle slurping couldn’t get any sleeker than at the Noodle Bar. Only 12 diners can fit around a U-shaped bar where the light grained woods of its counter and stools contrast the dark, concrete-chic interior.
Behind the counter cooks mix, knead and pull noodles and tend a cauldron of broth that simmers seven hours until ready.
The menu, like the space, is compact but the limited choice of tendon (30RMB), tripe (30RMB) or brisket (28RMB) added to the delicious broth may scare away the offal averse.
There is also a vegetarian option, but anyone who has never tried tripe should do so here where it is meltingly tender. Thick noodles, there’s also a thin option, combine a chewy, udon-like texture with a satisfying flavour. Side dishes such as garlicky cucumbers (11RMB) and spicy beef shank (18RMB) round out a meal.
The 38RMB set meal includes a bowl of noodles with all three meats and two small side dishes. Complimentary oolong tea is also served.
