Pitsylia is known for the traditional meat goods it produces, and this family-run company has a retail shop near Agros's village square to hawk its wares. The savoury delicacies (mostly pork cuts) are traditionally matured in locally-produced red wine with various spice mixtures, smoked and salt-cured. If you want the really authentic experience, try the tough Cypriot version of jerky: tsamarella is sun-dried goat meat, heavily dusted with salt and oregano. The free tasters in the shop are served with a sliver of Cypriot cheese and a shot of fiery zivania.
