Opened in 1999 and housed in an impressive 19th-century building, the Dean Gallery is conveniently situated directly across the road from the Scottish National Gallery of Modern Art; you can easily combine a visit to both in a day. The exhibitions it hosts are often enlightening, and the gallery currently holds one of Britain's largest collections of surrealist and Dadaist artworks, including pieces by Dalí, Giacometti, Miró and Picasso. However, its layout is rather sterile, and the curators dedicate what is arguably an excessive amount of space to work by Edinburgh-born artist Sir Eduardo Paolozzi: in addition to a large array of his works, there's even a mock-up of his studio here.
