There are now 12 Malmaison hotels across the UK, but this property was the first to arrive. Launched in 1994, it's housed in a former seaman's mission in a grand building where the Water of Leith meets the docks. When it opened, it brought a sense of boutique style to the waterfront; it's now showing its age in some ways, but the suites and rooms still have a plush feel to them. There are three Michelin-starred restaurants within walking distance: Restaurant Martin Wishart, the Plumed Horse and Kitchin.
