Tom and Michaela Kitchin set up in Leith in summer 2006, and had a Michelin star within the year. Since then, they've operated at the apex of the city's restaurant scene. The quality of raw materials is impeccable (hand-dived scallops, Anstruther langoustine, Dornoch lamb), and Tom's cooking has a little more edge than the classic French approach in evidence elsewhere; look out for dishes such as boned and rolled pig's head with crispy ear salad.

My partner and I had lunch here last week. We popped in on the off chance we could get a table and they managed to squeeze us in. We were both hugely impressed at the quality and value. We had the set lunch at £25 for 3 courses. All serves were generous, plus they included pre-dinner crudites, an amuse bouche, and (if you order coffee/tea) a selection of petit fours. The wine list had interesting selections, even if ordering by the glass, as we did. The staff were very friendly. All in all a very pleasurable experience. Oh and if you are vegetarian, don't be put off by the seeming lack of vegetarian options in the main menu. There is a separate, and very good, seasonal vegetarian menu.
