The core of the George, one of Edinburgh's old stagers, dates back to the late 18th century, although the building has only been a hotel since 1881. The business was taken over in 2005 by Principal Hotels (now Principal Hayley), and subjected to a £20 million refurbishment that was finally completed in summer 2009. The rooms are all quietly contemporary; some have fantastic views north to the Forth and Fife. The EH2 Tempus bar-restaurant is modern and slick, but this remains an Edinburgh hotel of some tradition.
