Chef Tony Borthwick ran a Michelin-starred restaurant in south-west Scotland before moving to Leith and opening the Plumed Horse. The Michelin star was regained in 2009 for Borthwick's careful, considered cuisine: dishes such as twice-baked parmesan and truffle soufflé, or poached and roasted organic quail with Puy lentils. The midweek supper (Tue-Thur, three courses, £30) is the most affordable way to sample his talents.

The Plumed Horse overrated food overpriced and all in all not very a good experience due to the fact oversalted food no customers apart from 2 people in the entire restaurant the service was okay but why so much salt on the food Y and the risotto was extremely extremely crunchy almost like and nut it was not cooked a restaurant with no customers is the best way I can sum up this business I should have spent my money somewhere else I have to work extremely long hours day after day I do like to eat out and get the best value and the best experience this restaurant was recommended to us by The Kitchen Restaurant due to the fact all the other restaurants we called were fully book out for lunch…3 places before we got the Horse or donkey
