The formula at this perennial Old Town favourite has a simplicity bordering on genius. Create a basic Italian menu (antipasti, risotto, panini, pasta) and throw in the odd special. Devise an Italian-slanted wine list. Store the bottles of wine along one wall as a design feature, run the bar along the other side of the room, light some candles… and abracadabra.
