Scotland's most famous rugby venue still draws sell-out crowds - if you want to see any high-profile games try and buy tickets well ahead. Or if you're not fussed about big name clubs or internationals, a good option is going to see local clubs, like the Edinburgh Gunners, for which booking isn't necessary. Another option, assuming there's no big match that week, is a stadium tour. These are offered at 11am and 2.30pm from Monday to Friday and need to be booked two days in advance.
