Gourmands from all over Istanbul regularly make the pilgrimage to Kanlıca, midway up the Bosphorus, for what many locals swear is the finest fish in Istanbul. As with most seafood restaurants, the emphasis is on whatever is freshest, but try not to miss the signature dish, tuzda balık or 'fish in salt'- a whole fish baked in a crust of sea salt, a method which preserves all the flavour and succulence. Booking is essential.
