Chef Galvin Lim, group executive chef of the Les Amin Group of Restaurants, is visiting our city to cook up an exquisite six-course dinner. Chef Galvin has trained in some of world's best restaurants including Lameloise in Burgundy, Le Gavroche in London and Les Elysees du Vernet in Paris. Diners will begin their meal with eggplant caviar, Spanish octopus and fennel pollen aioli followed by ciabatta wrapped in crispy white asparagus, confit egg and morel mushrooms. The Danish halibut with Australian black winter truffles, potato gnocchi and sakura ebi is a lead up to the char-grilled Wagyu cooked in hay blue foot mushroom, lettuce and truffled French fries. Lastly, finish it off with a fancy lemon tarte with thyme ice cream.
