Renoma’s New Year’s Eve degustation menu is a celebration of the four seasons. You start with a summer appetiser of chilled Momotaro tomato soup with sea prawn timbale, pineapple, chilli and mint oil, before proceeding to an autumn dish – pan-seared foie gras with butternut squash risotto and sweet potato chips. Mains are inspired by winter, and you have a choice of either the slow-braised Black Angus beef cheek in red wine or oven-baked halibut fillet with mantis prawn. You end with spring, which is a creamy vanilla pudding with crumble and forest berries stew.
