New York superstar Boulud received a special exemption from Steve Wynn's edict that every head chef in his hotel must work there full-time. But his absence isn't evident in this perfectly executed brasserie, which gives diners a chance to sample his less formal fare (burgers, raw bar selections, sweetbread schnitzel). The casually cultured dining room has an incredible view of the hotel's man-made waterfall and surrealist light show.
