The name refers to the design by the Graft Lab of Berlin, in which the mahogany walls have a canyon-like appearance. It will lure you in; the American-style cuisine (giant steaks, Kobe burgers, whipped potatoes and comfort desserts such as modern-day cookies and milk) will make you glad you stayed.
