The experience at MGM's lively cocina starts as soon as you see the bold colours and backlit tequila-bottle tower. Traditional Mexican recipes are exemplified and often modernised; Oaxacan carne asada (mesquite-grilled chilli-marinated beef), Yucatan-style braised pork, cactus and tequila salsa, and so on. A tasting menu offers more unique bites, such as braised pit-style goat and table-made shrimp cocktail.
