While running oft-overlooked Renoir at the Mirage, Alessandro Stratta earned a reputation among many locals as the city's finest chef. At Alex, he's getting the chance to prove it to the world. With a sweeping staircase inspired by the film Hello, Dolly! this is the most elegant restaurant in the Strip's most elegant casino; there are even individual stools for ladies' purses, so they don't have to touch the floor. And Stratta's seasonal dishes, inspired by the flavours of the French Riviera, are as good as it gets.
