Up on the 56th floor, venerated local André Rochat (of longstanding Downtown restaurant André's) has hired chef Mark Purdy to maintain his classics and deliver some fresh takes on French cuisine. Many of the seasonal dishes - pan-seared Muscovy duck with peach and foie gras tarte tatin - taste as great as they sound. It comes at a price, but Rochat, who's been cooking foie gras in Vegas since Dan Tana was around, is the business.
