The first bar from the people who went on to create the Worship Street Whistling Shop, VOC and Dach & Sons, Purl was a clear taste of things to come. The bar occupies the basement of a Georgian house and features low vaulted ceilings and lots of individual seating areas. It uses the ‘speakeasy’ feel and look that is now de rigueur everywhere, but pairs this with some excellent bar skills.
The list of cocktail creations is divided between molecular mixology and a confident mastery of classicism. The former often have spectacular presentation, with smoke, unusual glassware, balloon popping and clever sleight of hand. Drinks change frequently, but options might include a Backward Bellini – a lavender-soaked sugarcube topped with prosecco, finished with pomegranate foam; or a marmalade vodka with aperol and bitters, with a ‘juniper oil burner’. Booking is advisable.
