This capacious, Japan-themed bar-restaurant has an open-plan design that one suspects would make the place terribly sad and terribly dated if there were no one in it. It’s a good thing, then, that Zuma is always packed: at 10pm on a Monday night in February, the bar and the restaurant were both absolutely rammed. In spite of the crowds of eager customers, the impressive and knowledgeable staff took plenty of time over our drinks: a gentle old-fashioned made with a Japanese single malt, and a saketini that blended Tanqueray Ten with Tosatsuru Azure saké to potent effect. If you can bag a couple of stools, the people-watching is terrific.
