Clearly aiming for the hearts of Chancery Lane’s besuited legal beagles, the team behind Nobu pulled out all the stops in making the Pearl a venue that lives up to its name. It’s an expansively glamorous place, with sweeping tiled floors, walnut wood alcoves and leather banquette seating, all contributing to a tonal neutrality that accentuates the little touches (strings of real pearls hanging from the ornamental light fixtures, for example). A great deal of thought has gone into the drinks menu, which at any given time offers almost 500 wines by the bottle, glass or as part of a £25 ‘wine flight’ tasting tour; premium spirit cocktails – including a tobacco-infused, seven-year-old rum nicotini – are similarly intriguing. A shame, then, that public attendance remains so erratic: when the Pearl Bar is almost empty – as it often seems to be – its sheer enormity is its atmospheric undoing.
