Unexpected delights await at Bar Bourse. The mood is elegant yet friendly, service is slick but fuss-free. Lunchtime crowds see the place filled with chummy banter and delicious aromas (organic salmon with fennel and citrus salads, £17.50). By night, the light wood and Regency stripe interior has its tables cleared away as the black-clad staff focus on relaxed attentiveness. There are no taps, but the bottled lager is intelligently selected (Tiger, Budvar) to chime with the tapas menu. The wine list offers 20 of each colour, with prices kicking off at the £16 mark. Cocktails are as professionally mixed as any in the Square Mile.
