The operators' claim that this is 'Europe's longest champagne bar' is a little misleading. While the tables stretch a fair distance along the length of the Eurostar terminal, the bar itself is a squat little thing. Still, sipping champagne beneath William Henry Barlow's Victorian roof is a lovely experience, not unlike drinking in a vast secular cathedral.

Searcy's has installed a professional operation with witty references to Anglo-French endeavour: selections from the champagne list, which features every significant Grand Marque and includes around 15 by the glass, are served in English-made Dartington flutes. It's possible to spend £880 on a bottle of 1996 Krug Clos de Mesnil; more affordable temptations include Tsarine Cuvée Premium Brut NV (£10.50 a glass or £61 a bottle). The short menu focuses on British ingredients.
