With its engravings and fringed chairs, the tiny, comfortable bar at this exclusive hotel looks like an upper-class Georgian sitting room, but few butlers could manage martinis of this calibre. If the art looks simple, that's because it is: the quiet waiters simply flick dry vermouth into an iced glass, fill it with gin or vodka (various premium options, all priced accordingly) and then drop in a sliver of lemon peel.

Whether the secret is the elegant wooden tray, the vermouth flask that resembles a vinegar bottle in a cheap chippie or the staff's mannered method of delivery, sipping a drink amid the murmur of the adult clientele while munching nuts and Puglian olives is one of the most soothing, elegant drinking experiences in the city.

Went to try their Dry Martini, as it was supposed to be a "must". The space is rather small with no privacy at all: it was difficult to concentrate on my newspaper as next to my ear a young couple was talking (not too loud) about their things. Not the place to have discreet conversation. The waiter was correct and agreeable, but lacking the expertise and knowledge that I expected. The Dry Martini was rather good. Excellent gin: No.3 London Dry, but could not find out the vermouth they use (exclusily made for them, the waiter said), the he suggested 'Martini Extra dry'. Don't think so! I can't agree it is too sweet.... Noilly Prat works much better.
Price for the whole thing (drink+3 little bows with munchies, olives, and sthing else): £17.
