Jaimini Patel's intricate models of colonial buildings are made from the commodities that built the Empire: tea, coffee, cocoa, sugar and spices. Local people have also been involved in the project, through which they studied the museum's dollhouses and created confectionery versions of Georgian architecture and contemporary urban icons.
