Much money has been spent on what is still a highly fashionable dining experience at Cocoon – witness the Riedel wine glasses, the American Beauty tables of clear perspex encasing faux rose petals, the celebrity wine list, and the swivelling leather chairs. Designer Stephane Dupoux has created pod-like rooms divided by sheer net curtains that tend to kill the atmosphere, but not the noise from the loud groups of Euro-corporates and property developers. While much of the high-born menu borrows from the likes of Zuma, Hakkasan and Nobu, it is classily put together by chef Andrew Lasseter and his team. A starter of scallop and salmon nigiri sushi positively beamed with freshness; and a three-seaweed salad tossed with tofu, baby leaves, edamame and pumpkin seeds was a textural treat, if a little heavy with sesame oil. Silky flaps of seared tuna served with miso aïoli were both lush and light, and Korean ‘bulgogi’ of rare beef ribeye with wild mushrooms spoke volumes for the quality of Lasseter’s suppliers.
