    How does it feel to be one of Time Out’s all-time London heroes?

    ‘Surprised and honoured.’

    Who are your London heroes?
    ‘Joseph Ettedgui, the founder of the Joseph clothing chain.’

    What’s the biggest thing that’s happened in your field over the past 40 years?
    ‘In the ’80s, Conran delivered the concept of modern urban dining to a wider audience, initiating the subsequent culinary revolution that has resulted in today’s thriving restaurant scene, celebrity chefs and all.’

    What’s your favourite place or thing in London?
    ‘The back of a black cab.’ Feature continues

    What’s your personal favourite moment in London? Where were you, and what was happening?
    ‘Late afternoons on dark, mild, winter days when it’s neither wet nor cold – rare moments in London!’

    What’s the future for your field in London? What are your hopes, and what needs to happen?
    ‘There should be many more places offering high quality and value for money, using the best produce and ingredients – just like in France, Italy, Spain and Japan where food culture is a given and accessible to all.’

    What does Time Out mean to you?

    ‘Time Out is all about London – whenever I see the international editions on my travels, it still reminds me of home.’
