Las Tortillas de Gabino Restaurant, its name already defines the absolute star of its cuisine: the tasty, traditional and incomparable Spanish potato omelette, which is still prepared in this establishment in the same way that made it famous at La Ancha on calle Velázquez in the 60’s. In fact, this variety appears on the menu under the name La Velazqueña, although it is followed by seven other varieties: the one with cod shavings and cream of leeks, the one with potatoes and Galician-style octopus, the black one with squid, the one with potato chips with a side of salmorejo, the stewed one with callos, the one in garlic soup and the one with funghi porcini, mushrooms, eggs and truffle. But omelettes are not the only thing that comes out of their stoves, since their menu is open to all sorts of starters, salads and vegetables –like the warm foie-gras treats, the Iberian ham croquetas, the chicken and arugula salad with honey dressing or the green asparagus with melted Masdam cheese-. For those who have a sweet tooth, there is nothing better than ending a meal with the Brie cheese flan or the warm carrot cake with coconut ice-cream.
