At chef Pichet Ong’s new bakery, the palate-bending pâtissier reaches into the Asian pantry to revamp American classics. His passion fruit and coconut rice pudding ($4.50) is a prime example: Ong reworks the typically predictable treat, transforming it into a weightless, newfangled entity. The dairy-free dessert gets its delicate flavor from fragrant jasmine rice, coconut milk, vanilla and fresh lime zest. A crown of passion-fruit seeds adds crunch and refreshing acidity, while the occasional golden raisin is a tasty reference to more traditional versions. Go soon—Ong changes the menu frequently. West Village residents will be pleased to know that Batch should be delivering within a week, which means that the pudding, while it lasts, is just a phone call away.
