Why you'll dig him: In New York City in 2011, the cocktail bar and the neighborhood spot are rarely the same place. There's the joint you visit because the atmosphere is rarefied and the drinks are perfect. And then there's your local, where the staff knows your poison and your favored stool. That Clover Club covers both territories is a credit to its head barman, Brad Farran, who moved from North Carolina to take a gig when the Club opened in 2008. Farran is intuitive: He gauges whether you've come to get tweaked up for a night out or to geek out over bitters, and he lines them up accordingly. He's also a forward thinker: With co-Clover barman Nick Jarrett, he's working on a green mobile pop-up bar to explore ways to reduce the environmental footprint of saloons around the country.
He says: "Make a good drink. Serve it well and with a smile on your face. That's a philosophy I can agree with."
