Black IPAs

A black India Pale Ale might sound like an oxymoron, but that hasn't stopped American brewers from experimenting with this breakout style. Think of it as a mash-up of an IPA—known for its amber-to-gold hue and bold hoppiness—and a dark beer like a stout or porter, which derives its midnight shade from roasted malts. The result: a jet-black pour that marries bright, floral American hops with notes of coffee, cocoa and toffee from the malts. This past year, the hybrid caught fire on the West Coast (where some brewers have rebranded it Cascadian Dark Ale, after the Cascades mountain range), but now producers nationwide are turning to the dark side.

Three to try:

Sublimely Self-Righteous Ale (Stone Brewing Co.) This dangerously easy-drinking coal-black double IPA packs a full-throttled bitterness, while notes of java and roasted malts add complexity. Available at Whole Foods Bowery Beer Room, 95 E Houston St between Bowery and Chrystie St (212-420-1320). 22oz bottle $6.99

Yakima Glory (Victory Brewing Company) In this heady brew, brash hops from Washington State go toe-to-toe with rich German malts. Available at Swift Hibernian Lounge, 34 E 4th St between Bowery and Lafayette St (212-260-3600, swiftnycbar.com). Draft $7.

Bump in the Night (Full Sail Brewing) Though Bump pours the color of 4am, it presents a light floral perfume that's full of citrus and tropical notes. Available at Rattle N Hum, 14 E 33rd St between Fifth and Madison Aves (212-481-1586, rattlenhumbarnyc.com). 22oz bottle $15.
