Why you'll dig him: Walking through Crif Dogs' secret phone-booth passageway into PDT is an essential New York experience. But Bell knows that novelty takes a place only so far. To keep you coming back, he puts PDT's game-changing farm-to-table mixology in the spotlight with seasonal creations like the recently debuted Vigne Verte. The drink matches grape-distilled gin with tomatillos, celery juice, muddled peppercorns and grape-sugar syrup. But if you just want something "fruity with vodka," he'll make sure you're a happy tippler—as an alum of Maialino, where he ran the bar program before getting tapped by Jim Meehan, Bell translates Danny Meyer--brand hospitality into his work in the booze biz.
He says: "People always want me to make them my favorite drink. My favorite varies just like everyone else's, and that may not be the best thing for that particular customer. Everyone's palate is different."
