    Quay Street Brewing Company Pure Malt Vinegar
    Light-bodied and mildly hoppy Michigan Cream Ale is the base for this amber-colored vinegar, which matures for a minimum of ten weeks before bottling. The Quay Street Brewery in Port Huron, Michigan, makes about only ten gallons of the tart stuff at a time, which means it can be hard to come by in NYC. If you're lucky enough to score a bottle, use it to douse winter greens or brighten a classic potato salad.     Schneider Weisse Weissbieressig
    G. Schneider & Sohn, which has been churning out suds in Kelheim, Germany, since 1872, teamed up with acclaimed vinegar producer Erwin Gegenbauer to create this pantry homage to the brewery's Aventinus Wheat-Doppelbock. The fermented beer vinegar spends 12 months in oak barrels to coax out its cherry, vanilla and clove notes. Sprinkle it on raw or cooked meats, or dash it over roasted potatoes.     Gegenbauer Beer Vinegar

    Gegenbauer Beer Vinegar
    Fans of the English classic fish-and-chips will want to have a bottle of this unfiltered and unpasteurized Bier Essig (beer vinegar) on hand. To make the cloudy condiment, staffers at the Hofstetten Brewery in Upper Austria drop white-hot stones into mashed grains, caramelizing the malt and teasing out smoky roasted caramel flavors. The resulting Granit Bock is then injected with pure cultured bacteria to produce this tart and yeasty vinegar.     Dogfish Head Noble Rot
    This "sorta-saison" blurs the line between beer and wine. Unfermented juice (referred to as "must") from viognier grapes is infected with a fungus that concentrates its sweetness, then blended with pilsner and wheat malts, plus Belgian yeast. The funky liquid is a champagne lover's beer---clean, effervescent and fruity, with a dry, metallic finish.     Vodka loyalists will appreciate this spirit, crafted by Silicon Valley distiller Dave Classick. The crisp and clean tipple starts life as a California pale ale, run through a copper alembic still. The process produces a clear, potent quaff that's similar to an unaged single-malt whiskey; it's best served very cold over ice, mixed into a lime rickey or into a classic martini.     Kiuchi No Shizuku

    Kiuchi No Shizuku
    Japanese distillery Kiuchi is behind this floral
    and herbaceous beer brandy. The name translates to "first drip from the distillation kettle," a reference to the liquid's production: Hitachino Nest White Ale is distilled with hops, orange peel and coriander, and then matured in oak barrels, yielding a light and dry beer-liquor hybrid with notes of juniper.     German beer heavyweights G. Schneider & Sohn twice-distill their Aventinus wheat doppelbock, a dark, full-bodied wheat beer, to create three varieties of this 90-proof grain alcohol. The Fresh selection is clear in color and spends no time aging; another logs 16 months in French chardonnay barrels; while the last is aged for 36 months in M.
