Chef Daniel Boulud left much of his usual French frippery behind at his Bowery game-changer, the year's top tribute to all things in casings and casks. Spanning sausage traditions around the globe, the kitchen turns out hit after hit—from an artisanal onion-, relish- and mustard-topped take on the lowly beef frank, to the Viennoise, a smoky, Southern French porker stippled with chunks of Emmentaler. But as at any sausagefest, it's the beer that really gets our panties dropping.
