Bar Pleiades is the exception: Daniel Boulud's stunning attempt to bring serious seasonal cocktails to the Upper East Side is unapologetically shiny and new—and is still bound to have the staying power of Coco's timeless two-piece. The gleaming Art Deco interior (designed to evoke a Chanel compact) calls for a classic drink, like the La Tradicion.
