The New York slice once held the pizza title, able to defeat any contender. But then the Neapolitan pie arrived, forged in the heat of a wood-fired oven, and the familiar triangle has been down for the count ever since. This year's champ gets the subtleties right: The classic Margherita has a charred crust that's airy yet elastic, smeared with sweet sauce and topped with gooey pools of fior di latte mozzarella.
