You might bristle at a Chicago dog and won't embrace the deep-dish pizza, but one Midwest import scored your approval: chef Missy Robbins, who took the helm at A Voce this year. Her first-rate pastas (try the ricotta-stuffed quadrati) and delicate treatment of ingredients (simply roasted, spectacularly meaty trumpet mushrooms) have shown us that urban allegiances have no place at the table.
